Do you know what dish is the most popular in the cold winter in China? I know it’s hot pot. Hot pot is a Chinese tasteful folk dish. No matter in the north or in the south.
The Chinese hot pot boasts a history of more than 1,000 years. In fact, it is the most famous and favorite dish in Chongqing. This is the home of hot pot. Chongqing local people consider the hot pot a local specialty, which is noted for its peppery and hot taste, scalding yet fresh and tender. Usually, there is a metal hot pot in the middle of table. When the soup in the pot is kept simmering, dishes are put into the pot. Beef, mutton, fish and vegetables are the main dishes.
There are many types of Hot Pot. The first I want to introduce is Red pot. It is the most famous hot pot in Chongqing，to which a special spice known as chinese prickly ash is added. It creates a sensation on the tongue that is both spicy and numbs slightly, almost like carbonated beverages. A Chongqing hotpot is markedly different from this type eaten in other parts of China. And this is the picture of Red pot.
The second one is White pot. The essence of white pot lies in the broth, which contains bone, oil, wine, sugar and spice. This is the picture of White pot.
The third one is Yuanyang Pot. In our area, the most common hotpot is called yuanyang pot. The pot is divided into two parts, with one part light broth and the other spicy broth, just like the pair of yuanyang or mandarin ducks, never being separated.
people in China like hot pot very much and every region has its local features. For example, Sihuan hot pot is hot while Guangdong hot pot is famous for its fresh. It is extremely popular in winter because it can keep the dishes warm all the time. And the atmosphere is hot, too. The high temperature in the hot pot is symbolic of the warmth and harmony of tender feeling that those people sitting around it have for each other.
Undoubtedly, this way of eating is not only a figurative embodiment but a visual indication of the willingness to eat from the same pot and to share the same lot. Friends or relatives sit down together to have a feast. It’s a good way to relax.
